These cookies are a fantastic option for a breakfast on the run, pre or post workout refuelling, sweet tooth craving, snack and also useful for recovery after exercise. Using mashed bananas means they will need to be eaten within 2/3 days so be sure to have some extra mouths to feed or you may just eat them all!
3 Mashed Banana (220g)
1 Large Egg
3 Egg Whites or 150ml bottled variety
10g Protein Powder (Vanilla/Salted Caramel recommended)
1 Serving Powdered Peanut Butter (not essential)
20g Peanut Butter
2 Handfuls Blueberries
2 tspns Chia Seeds
1 tspn Pumpkin Seeds
1 tspn Manuka Honey
1 tspn Vanilla Essence
½ tspn Cinnamon
Dash of Baking Powder

- Set your oven to 175 degrees centigrade to begin.
- Mash the bananas well, then add in each other ingredient to a large bowl.
-Mix well until it is a soft and stodgy consistency.
On a non stick or coconut oil coated pan, place cookie sized dollops of the mixture using your hands or spoons, allowing some room for them to spread.
- Bake for 15/20 minutes.
- Use a spatula to ensure you life each cookie from the tray without any getting left behind, and transfer them to a wire rack for cooling.
- Store in a fridge to try & keep them fresh for as long as possible.
